New team sets standards at renovated Lowther family pub

AS Charles Lowther officially opened the doors of the George and Dragon, in Clifton, following his extensive renovation project, chef Paul McKinnon and his new team of staff set their standards high.

More than 300 guests attended a party at the pub hosted by Charles and his mother, the Countess of Lonsdale, to celebrate its official opening. Since Charles took possession of the pub in April, local craftsmen have been lovingly restoring and redecorating the 18th Century coaching inn, using local materials and traditional designs. Ten bedrooms are currently being refurbished and will be ready to let in the next couple of months.

Guests were treated to a taste of Paul’s cooking of fresh, seasonal ingredients direct from the Lowther Estate. Paul, who trained with the North East’s most famous chef Terry Laybourne, now manages his own four-chef team in the brand new kitchens at the George and Dragon.

Michelle Coggins, Paul’s fiancee, manages front of house. She said: “I’m so pleased to be part of such a dedicated team where everyone is passionate about the philosophy of the pub. The wonderful staff here are what helps make the George and Dragon such a warm and welcoming place.”

For three years, pub owner Charles searched for a perfect establishment he could use to showcase his family estate’s produce and unique heritage. He said: “I take huge pride in the quality of the meats and vegetables produced on Lowther Estate and being able to offer people the opportunity to enjoy it at such good value is wonderful.”
